Since Easter 2023, this venture, launched by the Topalidis siblings, has been steadily winning hearts. Built entirely around the philosophy of handmade sourdough bread—and every kind of baked good or sweet creation made with sourdough—it revives, day after day, the quality and authenticity worthy of our “daily bread,” at any hour.

Behind the success of Country Breadery are three siblings: Alexandros Topalidis and his sisters, Kyriaki and Marianthi. Their shared passion for quality products and genuine flavors led to the creation of a place now well-known throughout the city center. Their journey was no accident. What began as a simple interest in bread evolved into a deep need to offer something missing from the market: “real bread,” as they call it—just like in the old days.

The bakery’s philosophy is crystal clear: zero improvers, zero additives. Everything is made daily in the open workshop, where customers can watch the magic of baking unfold. Inspiration comes from the owners’ travels abroad, bringing in new techniques—yet always with respect for the long, honest, handcrafted tradition.

The secret: slow-fermented natural sourdough

The cornerstone of Country Breadery’s baking is its natural, handmade, slow-fermented sourdough. Even the bakery’s name nods to the rustic origin of true sourdough bread. Soft on the inside, perfectly crisp on the outside, Country Breadery’s loaves have a fragrance and texture like no other.

The process—requiring many hours and precise temperature control—is the key to the numerous benefits of this bread. It’s more digestible (even suitable for those with mild gluten sensitivity), higher in nutritional value, rich in probiotic microorganisms, longer-lasting, and above all, unmatched in flavor and aroma.

The menu features eight main types of bread, some truly special: whole wheat, white, olive bread, multigrain, rye, French baguette, focaccia, and chocolate bread.

A symphony of flavors unfolds: French croissants filled with various pralines, the beloved crunchy praline rolls, the chocolate bow croissant, and the famous baked Basque cheesecake. New additions include cinnamon sticks (with or without sugar) and the freshly baked crumble-style apple pie.

When it comes to sweets, Country Breadery also shines with its seasonal offerings—like melomakarona (honey cookies) and festive tsoureki (sweet bread)—soon to make their holiday appearance!

For savory lovers, the handmade rustic pies, with buttery phyllo and fillings of goat cheese or goat cheese with spinach, bring back the taste of grandma’s kitchen—perfect for breakfast or any time of day, thanks to their hearty flavor.
