The journey of “Fleur” has a backstory. It began back in 2011 under a different name and introduced Thessaloniki’s public to a new philosophy in pastry and baking. Today, matured and evolved, the same team of creators has been making the next steps since 2019 with “Fleur Boulangerie & Patisserie”, continuing their dream with a new identity, greater specialization, and the same dedication to quality.
Behind “Fleur” are Pastry Chef Konstantinos Tsenikidis—who says he has found in gastronomy what he wants to do for the rest of his life—and Stathis Alibakis, who together opened the first shop in 2019 at 6 Dimitriou Foka Street, in Pylaia. In autumn of 2024, the “Fleur” family grew with a second, boutique-style boulangerie at 127 Egnatia Street, also in Pylaia. These two locations have become points of reference for anyone who loves quality, good bread, refined desserts, great coffee, and carefully crafted savory creations.
The philosophy behind the “Blossom”
The name “Fleur” is no coincidence—it symbolizes the blossom, the most beautiful and refined part of a plant. With this symbolism, “Fleur” aims to infuse every product with purity, originality, and beauty. For the people behind “Fleur,” passion for creation simply means “the very best.”
Their philosophy is inspired by French tradition: desserts that rely on the flavor of the ingredients, not sugar overload. That’s why they use authentic ingredients—single-origin chocolates, natural Madagascan vanilla, fresh seasonal fruits—resulting in creations that stand out for their purity and intensity.
All of this is reinforced by the experience gained through seminars and training with M.O.F. Chefs in France (“Meilleur Ouvrier de France,” or “Best Craftsmen of France”—a title awarded through a rigorous competition and two-year training program by the French government to those who master their craft).

From monastic-style bread and ancient grain zea bread, to traditional ciabatta, everything is made daily with deep respect for tradition and a commitment to quality.
Additionally, baked goods such as pirozhki, pizzas, peinirli, and croissants are daily favorites for hundreds of customers, while pies with feta and olive oil or grissini in various flavors showcase the attention given even to the simplest offerings.
Savory creations with a focus on sandwiches
Special attention is given to Fleur’s sandwiches, made with focaccia bread baked fresh every morning in-house. The fillings are based on handmade spreads and premium deli meats: Pastrami, Rosemary pork, Smoked turkey with paprika, Italian prosciutto, Pistachio mortadella, Mozzarella, Premium graviera cheeses… The result? Sandwiches that stand out in both taste and quality—unlike anything you’ve tried before!
