“Choureal” is a special pastry shop in Thessaloniki. In fact, one would not exactly call it a pastry shop, but a completely unique project. It is the place where the first tailor-made, a la minute profiteroles were born. A place that introduces us to a different art of this beloved dessert and that specializes entirely in choux pastry, which is its base.

It has been loved since its first opening, on Paleon Patron Germanou Street. The second store in Thessaloniki, on Eleftheriou Venizelou Street, came almost as a request from the people.

Its grace has rightly reached Athens. At the end of 2018, it opened in the area of Syntagma, while the newest Choureal in Chalandri has been operating for six months. Over the years of its operation, it has won over 20 taste and entrepreneurship awards.

We queue outside its window, discussing what chocolates we will put in our profiteroles, whether to fill the choux with pastry cream or ice cream, and whether our profiteroles will be accompanied by fresh strawberries, cookies, nuts or other delicious toppings.

“Choureal” was first opened on 7 Paleon Patron Germanou Street in 2014, by chemist Miles Anastasios Skliris, his wife Aliki and his siblings, as a result of the former’s desire to get involved in catering. They envisioned a project that would include all the elements of the evolution of pastry. Specialization in one product, open kitchen, preparation of all ingredients in an in-house laboratory from top raw materials. And all this around his favorite dessert, the profiteroles.

The sweet ritual – the signature Choureal concept

Each Choureal profiteroles is offered from production to consumption and is a unique creation. It is prepared a la minute, that is, live “in the moment” in front of the customer, according to his preferences: crispy choux are filled with pastry cream or ice cream, to be followed by the choice of high-quality chocolate. Classic bitter or milk, white, caramel, hot from the bain marie, hazelnut praline, as well as seasonal ones such as orange chocolate and chocolate with liquorice are among the proposals, characterized by their intense and refined taste. The sweet ritual is completed with the choice of toppings, such as nuts, biscuits, fresh fruit and whipped cream.

The ingredients of “Choureal”

All Choureal products are produced 100% in its workshop, from selected natural raw materials, many of which are imported and used exclusively by the brand. Fresh Greek milk and eggs, butter from the Alps and Brittany, natural Madagascar vanilla, selected flour, very high quality chocolates and handmade nut pralines, form the basis for the creation of all products. The ice cream, also of their own production, can be enjoyed all year round on its own, in a profiterole or in a -also handmade- cone! No ready-made pastry mixes and no pre-prepared or frozen ingredients are used.

The choux are always freshly baked. Fresh dough is prepared dozens of times a day and baked on baking sheets every half hour, so that visitors always eat crispy, buttery choux. Eclairs, individual choux and Paris-Brest are sweets that belong to the profiteroles family and can be found in Choureal’s window in various flavors according to the season. They are strictly limited in daily production and are made every morning, until sold out.
